I’ve been chipping away at my list of kitchen stuff that I want/need. Every so often, I’ll go on an online shopping spree, and a few days later, a box full of goodies arrives at my door.* One such occasion brought me not one but three thermometers: candy, probe and old fashioned analog instant-read. I’ll admit that they’ve been spending a lot of time in a cabinet, but I have used two of the three.
My mom has really been my benefactress, though; the bulk of the goods have come from her. My mom is a yard and garage shopping pro. She found a barely-used KitchenAid stand mixer for $75, and it came with some attachments. She bought me a panini press for $10, and she found two of the Cuisinart pots that I like at TJ Maxx for less than a hundred dollars total. (They’re regularly at least eighty each.) Whisks, cake pans, muffin tins, spatulas, good cookbooks, she’s found them all at yard sales. It’s to the point where I mention I want something, and the next time that I visit her, I have it. I’ve been thinking about what to write about for two days, and really, I don’t have much. My 2015 thus far has been pretty dull. It kicked off with a mini-bang–I didn’t see any fireworks or go to any parties, but we at least went out and walked around in Paris until a quarter after midnight. I messed up last week. I told you that I had two good sides to go with turkey, and I really did, but posting on my blog completely slipped my mind on the Wednesday prior to Thanksgiving. On Tuesday night, I got my post ready, added the pictures, even edited everything, but I got busy and forgot to post it on Wednesday. I feel bad that I left you hanging, and my excuses are lame: I woke up and finished the last Harry Potter book, which I’d been feverishly since the weekend, and, once I‘d finished, started checking off all the things on my to do list prior to a trip to Kentucky. I had Swiss chard for the first time ever last week. I expected it to kind of be a kale-collard greens combo, but it wasn’t. It was really mild and colorful and good! It was even milder than spinach, which was a welcome surprise. I must admit, though, my favorite part is really how colorful and pretty it is– the bright magenta stalks are a welcome sight after a dark, dreary, traffic-filled drive home after work.
I might have actually eased into my chard introduction, because I didn’t just saute it and eat it plain. I saw this recipe for a chard, potato and goat cheese tart with red onion, and it sounded like it’d be delicious. Alas, I was correct. So, it is now soup season. However, I don’t really like soup. Stews and chilis, I’m okay with, but I can’t get the least bit excited when I hear someone say that soup is for dinner. There’s so much liquid, so little substance in many soups; they never seem to actually fill me up, and they all seems to lack in the flavor department.
One of my coworkers started talking about soups the other day, and then she started to wax poetically about broth. “Are you serious?!?” I exclaimed. “WHO LIKES A BOWL OF BROTH! THAT IS EATING NOTHING!” I’m quite incredulous about this. It is just beyond me to look forward to a big bowl of nothing when meal time rolls around. Continue reading “Thai coconut curry soup”
It is officially fall in North Carolina now, although I thought it would never come. I had almost started complaining about the lack of cool weather, but now that it’s upon me, I deeply regret any frustration that I had about wearing shorts in October and still needing the AC sometimes during my commute. Now all I want to do is crank up the heat, curl up under a blanket on the sofa, watch Homeland and eat warm, hearty food.
My kitchen has been cranking out plenty of hearty food as of late. I recently got a Dutch oven (which I will discuss further another time), and it’s gotten quite a bit of use in the two short weeks I’ve had it: soups and stews and root vegetable purees that reminded me that obscure root vegetables are obscure for a reason. This sauce might make your Italian grandmother cry. It’s effortless, and it has no heartwarming story. Being me, though, with absolutely zero drops of Italian blood pulsing through my veins and family members who think that pasta is one of those meals that you prepare when there is nothing else in the fridge, I’m not going to bother to console the weeping grandma. She needs to get with the times and make delicious tomato sauce that takes about half of an hour to throw together. No simmering for hours here– this is a great weeknight dinner when you want a home-cooked meal but just can’t put in the effort. Continue reading “Quick tomato sauce”
I had an ulterior motive sharing my last post; I have a recipe that uses caramelized onions. The recipe has a bit of a backstory.
When I first decided to start a blog, something that I really wanted to do was write about recipes that failed or were made of unnecessarily expensive ingredients or took way too much time for the result, and then I wanted to give you a replacement that was cheaper, easier and/or took less time with better results. It’s been almost six months, and I haven’t produced one of those “cook this, not that” articles yet.
But now I finally have one.
I made a really bland frittata a couple of weeks ago, and it disappointed me. The recipe was one of America’s Test Kitchen‘s 30 minute recipes that I got a few years ago. I have very high expectations for ATK–their recipes are truly the best of the best, but I’ve found through trial and error that their 30 minute recipes sometimes are greatly lacking. I don’t frequently cook seafood. It’s not that I don’t like it, but my mom nor my grandma do, so neither cook it. Therefore, I don’t really know how to cook it. I like it, though, and I’m going to try to think about going out of my comfort zone and preparing it more often.
From what one of my friends has told me, most people just stick fish in the oven to cook it. She says it’s pretty easy. I’ve found out on my own that shrimp is easier than that. All you really have to do is stick a little oil in a pan, throw in the shrimp, let them get pink on one side, flip them and let them get pink on the other side. Voila.

I’ve been having a really unexciting week. I was/still am a little sick. I get ear infections like a five year-old, and although I luckily and surprisingly feel no pain from them, they put a damper on everything. Needless to say, I haven’t much felt like cooking or even thinking about what I want to prepare to eat. So since I was already in the fritter mindset, I made an old faithful fritter.
Fritters: Stove top summer dinner supreme. This fritter, unlike the last fritter, is more fritter and not at all a pancake, and I can pretty much make it without thinking.
